The prepared powder was incorporated into noodle formulations along with oats flour, soy flour, and psyllium husk. The developed product exhibited enhances nutritional quality and functional characteristics. The anthocyanin-rich microgreen powder contributed natural pigmentation antioxidant potential. The invention provides an effective approach for utilizing microgreen sin value-added food products. Furthermore, it offers improved shelf stability and consumer acceptability. The developed noodles may serve as a functional food with potential health benefits. The invention supports the growing demand for nutritionally enriched convenience foods.
