Abstract: The present disclosure proposes an ultrasound-assisted multifunctional edible coating composition (100) for post-harvest preservation of sapota (Manilkara zapota). The composition (100) comprises 60 to 65 weight percentage of flaxseed mucilage (102) providing a film-forming matrix, 5 to 8 weight percentage of garlic peel extract (104), 6 to 10 weight percentage of ginger peel extract (106), 6 to 10 weight percentage of clove extract (108), 1 to 5 weight percentage of dates syrup (110), and 0 to 2 weight percentage of banana peel ash filtrate (112). The composition (100) regulates moisture transfer and gas exchange, inhibits microbial growth, microbial adhesion, and biofilm formation, and maintains post-harvest fruit quality. The composition (100) further promotes utilization of natural and agro-waste-derived materials and is suitable for post-harvest handling, storage, and transportation of sapota.
