Abstract: A system (100) and method (400) for non-destructive evaluation of freshness of fish are disclosed. The system (100) includes an apparatus (102) having a casing (104) accommodating an image acquisition unit (106), a processor (108), a memory (110), and a display unit (132). The image acquisition unit (106) captures an image of a fish sample, which is received by processor (108) for image pre-processing, including normalization and noise reduction. The processor (108) detects and localise an eye region of fish and segments localised eye region. Visual feature representations are generated from the extracted eye region and processed using at least one trained deep learning model stored in the memory (110) to determine spoilage progression characteristics associated with the fish. Based on the determined characteristics, freshness prediction parameters, and remaining shelf life are computed, and a freshness classification is generated and displayed through the display unit (132).
