Abstract: The invention relates to a sugar-free chewable nutraceutical candy composition and process of preparation thereof. The composition comprises beetroot extract standardized to betalains in the range of 5–15% by weight, monk fruit extract standardized to mogrosides in the range of 0.5–2% by weight, and a hydrocolloid matrix selected from pectin or agar in the range of 2–5% by weight. Optional adjuncts such as cinnamon extract, citric acid, and natural flavors may be incorporated to enhance functional and sensory properties. The process includes hydrocolloid base formation in purified water under controlled heating, incorporation of sweetening system, addition of bioactive components, homogenization, molding, cooling, and packaging in moisture-resistant systems. The formulation is structured as a chewable confectionery dosage unit intended for post-prandial consumption to support glycemic modulation. The invention provides reproducibility, stability, palatability, and regulatory compliance, thereby bridging functional foods and nutraceutical supplementation.
