Abstract: Disclosed is a process for preparing a stabilized herbal functional beverage from Stone Apple (Aegle marmelos) leaves. Fresh Stone Apple leaves are washed, shade- dried at 35°C to 45°C, crushed and extracted in purified water in a stainless-steel extraction vessel at 60°C to 80°C for 20 minutes to 45 minutes under agitation to obtain a Bael leaf extract. The extract is filtered through a multi-layer filtration membrane arrangement and mixed with ginger extract, tulsi extract, lemon extract, mint extract and a natural sweetening agent. The lemon extract acidifies the filtered Bael leaf extract before pasteurization. The acidified beverage is pasteurized at 72°C for 15 seconds, cooled and packed in a sterilized food-grade container under hygienic conditions. The process provides controlled extraction, clarified formulation, natural flavour balancing and stabilized beverage preparation.
