Abstract: The present invention discloses a process for the isolation of bioactive components, specifically glycoproteins and polysaccharides occurring with hydrophobic protein, from spent turmeric (Curcuma longa) industrial waste. The extraction process yields a "whole protein" glycoprotein composition rich in rare plant rate-limiting amino acids (cysteine and methionine) and an enriched resistant starch polysaccharide composition. The invention demonstrates the potent anti-inflammatory and anti-arthritic activities of these isolated compositions. Therapeutic applications focus on the management of rheumatoid arthritis by significantly reducing paw inflammation, edema, and serum inflammatory markers (IL-6 and TNF-alpha), while effectively restoring elevated blood cell counts to normal levels.
