The application for the patent was published on October 30, 2026, under issue no. 44/2026.

Abstract: ABSTRACT SHELF-STABLE DATE BURFI AND A PROCESS FOR ITS PREPARATION BY IN-PACK MICROWAVE TREATMENT The present invention relates to a shelf-stable date burfi and a process for its preparation. The process comprises preparing khoa from milk, mixing the khoa with ground sugar and date paste, and kneading the mixture to obtain a burfi mass. The mass is set, cooled and cut into pieces, which are packed in a polyethylene pouch. The packed pieces are then exposed to microwave radiation at selected power and time combinations, with shorter exposure at higher power, to reduce microbial load without charring or loss of fat. The microwave-treated burfi retains acceptable colour, body, texture and flavour and remains acceptable for a longer storage period than untreated date burfi, without added chemical preservatives. The invention thereby provides a date-enriched traditional dairy sweet with improved keeping quality and reduced microbial spoilage.
