Abstract: The present invention relates to development of food processing machinery and process for its fabrication. It particularly relates to the development of a continuous- type semi-automatic chilli fritters (Bajji) production machine designed for the continuous preparation of uniformly coated fried chilli fritters under hygienic operating conditions with reduced manual intervention. Specifically, the development of a semi-automatic continuous type chilli fritters, (Bajji) production machine comprising an integrated structural frame, a conveyor system having a plurality of spring-loaded chilli holding clips, a batter coating unit, a temperature-controlled frying unit, a heating system, an oil drainage arrangement and a product collection system. The machine is configured to continuously convey individual green chillies through batter coating and frying operations, thereby producing uniformly coated and uniformly fried chilli fritters with reduced manual intervention. The invention further provides controlled frying through adjustable conveyor speed and regulated frying temperature, resulting in improved production capacity, enhanced product uniformity, reduced labour requirement, improved operational safety and hygienic food handling suitable for commercial food production. The present invention also relates to the fabrication of the continuous-type semi-automatic chilli fritters (Bajji) production machine and production of chilli fritters.
