Abstract: Aloe vera is a valuable medicinal plant widely used for its nutritional and therapeutic properties. However, the fresh gel contains approximately 98% moisture, making it highly perishable and prone to microbial spoilage, which limits its storage, transportation, and commercial utilization. The present study focuses on the development of a rehydratable aloe vera health drink powder using a cost-effective drying method. Fresh aloe vera gel was extracted and blended with maltodextrin as a carrier agent to reduce stickiness and improve drying efficiency. The mixture was spread in thin layers and dried in a hot air oven at a controlled temperature of 55°C for effective moisture removal. The dried material was then powdered and evaluated for its physical and functional properties, including moisture content, rehydration capacity, pH, and sensory characteristics. Natural additives such as honey powder and citric acid were incorporated to enhance taste and consumer acceptability. The results indicated that the developed powder was free-flowing, non-sticky, and showed good rehydration properties without lump formation. The reduction in moisture content significantly improved the shelf life and stability of the product. This study demonstrates that hot air oven drying can be effectively used as a simple and economical alternative to advanced drying techniques for producing aloe vera powder.
