Abstract: Abstract Ready-to-Drink Date-Based Beverage Optimized for Health Benefits The present invention relates to a shelf-stable ready-to-drink milk-based beverage composition containing a date-derived component, and to a method for preparing the same. The beverage composition comprises a milk base, a date-derived syrup or date concentrate, one or more milk solids, at least one stabilizer, one or more flavouring agents, at least one acidity regulator, and water, and is characterized by defined physicochemical properties including total solids, fat content, and pH. In one embodiment, the beverage exhibits a brown-golden colour, a smooth and creamy appearance, and a pleasant date flavour with creamy and thick taste. The method (100) comprises providing (101) a milk base, standardizing (102) the milk base by addition of one or more milk solids, combining (103) the standardized milk base with the remaining ingredients to obtain a beverage mixture, homogenizing (104) the beverage mixture, subjecting (105) the homogenized beverage mixture to ultra-high-temperature treatment, cooling (106), and filling (107) to obtain the shelf-stable ready-to-drink beverage composition.
