Abstract: RAPID DETECTION OF TOTAL ACID CONTENT (TAC) IN BEVERAGES AND OIL SEED ELECTROCHEMICAL METHOD ABSTRACT The present invention relates to an electrochemical sensor and method for rapid and precise determination of total acid content (TAC) in fruit juices, wines, beverages, and oilseeds. A novel composite electrode comprising materials hydroxyapatite [HAP, Ca10(PO4)6(OH)2] nanomaterial and polyaniline (PANI) nanofibers is integrated into the sensor, enabling efficient and accurate quantification of TAC. The precursors employed for synthesizing HAP and PANI are inexpensive, abundantly available, and environmentally less toxic, ensuring sustainable applicability. The sensor demonstrates compatibility with additives, stabilizers, and antioxidants such as citric acid, malic acid, ascorbic acid, and phosphoric acid, commonly present in commercial juices. These substances contribute to controlled oxidation of the electrode, thereby enhancing measurement stability and extending the shelf life of packaged juices stored in laminated cartons. The invention thus provides a cost-effective, eco-friendly, and reliable solution for industrial and commercial monitoring of acid content in consumable products. (Refer Fig 1)
