Abstract: A production process for producing a yeast cell wall extract hydrolysate using organic acids. By means of preliminary hydrolysis of acetic acid, color and odor substances and inorganic salts carried by fermented and cultured yeast are removed, and a yeast cell wall extract is purified; then the yeast cell wall extract, from which the color and odor substances and the inorganic salts have been removed, is hydrolyzed by using formic acid, so that the resulting yeast cell wall extract hydrolysate product is easier to dissolve in water, is colorless, odorless and salt-free, and is beneficial for skin protection and repair. Also provided is a method for removing and recycling organic acids added in a process.
