Abstract: The present invention relates to a Process for standardized development of inulin enriched sterilized flavoured milk drink with functional benefits. The process comprises receiving and filtering raw milk, standardizing the milk to a predetermined fat and solids- not-fat content, preheating the standardized milk, adding sugar and stabilizer, incorporating inulin under controlled agitation, adding permitted flavouring agents, homogenizing the beverage mixture, filling the homogenized mixture into sterilizable containers, sealing the containers, sterilizing the sealed containers, and cooling the sterilized product. Inulin is incorporated in a controlled concentration to provide dietary fibre enrichment and functional benefits while maintaining acceptable viscosity, mouthfeel, flavour, and stability. The process enables uniform dispersion of inulin and prevents lump formation, sedimentation, and phase separation during sterilization and storage. The resulting product is a shelf-stable, palatable, functional flavoured milk drink suitable for commercial dairy production and direct consumption.
