Abstract: PROCESS FOR STABILIZING VITAMIN A IN CONFECTIONERY MATRICES USING NANOENCAPSULATION The present invention relates to a process for stabilizing Vitamin A by nanoemulsification and nanoencapsulation for confectionery applications. The process comprises preparing an oil-in-water nanoemulsion using Vitamin A oil and soy lecithin followed by ultrasonication to obtain a stable nanoemulsion. The nanoemulsion is characterized using Dynamic Light Scattering (DLS) for determining particle size distribution and polydispersity index (PDI). An aqueous coating solution comprising maltodextrin, acacia gum, and orange peel powder is used for encapsulation followed by homogenization and spray drying to obtain a fine free-flowing Vitamin A powder. The spray-dried nanoencapsulated Vitamin A powder is incorporated into a chocolate formulation for fortification. The process enhances the stability of Vitamin A during processing and storage.
