MUMBAI, India, July 7 -- Intellectual Property India has published a patent application (202641078782 A) filed by National Institute Of Food Technology, Entrepreneurship on June 25, 2026, for Process For Producing Palmyra Fruit Powder Through Formation Of Palmyra Fruit Leather Using Heat Pump Drying.

Abstract: The present disclosure proposes a process for producing palmyra fruit leather and palmyra fruit powder from mature palmyra fruit pulp. The process comprises collecting mature palmyra fruits, cleaning the mature palmyra fruits, removing an outer cover, separating edible palmyra fruit pulp, and subjecting the palmyra fruit pulp to moist heat treatment to reduce enzymatic activity, microbial load, and stickiness. The treated palmyra fruit pulp is filtered to remove coarse fibers and impurities, spread as a thin layer on drying trays, and dried in a heat pump dryer operated at 45°C for 36 hr to form dehydrated palmyra fruit leather while reducing thermal degradation of bioactive compounds, natural sugars, phenolic compounds, vitamins, aroma compounds, and antioxidants. The dehydrated palmyra fruit leather is pulverized and sieved to obtain palmyra fruit powder exhibiting improved storage stability suitable for ambient storage.
