Abstract: ABSTRACT PROCESS FOR PRODUCING AN IRON-FORTIFIED BOBA BEVERAGE BY REVERSE SPHERIFICATION A process for producing an iron- fortified boba beverage (38) comprises extracting a first fruit juice (10) and a second fruit juice (20). The first fruit juice (10) is incorporated with a carbohydrate carrier (12), a protein carrier (14), and an iron compound (16) to form a first mixture (18), freeze-dried to obtain a first encapsulated powder (22), and rehydrated to form a beverage base (24). The second fruit juice (20) is incorporated with a carbohydrate carrier (12), a protein carrier (14), and an iron compound (16) to form a second mixture (26), freeze-dried to obtain a second encapsulated powder (28), and rehydrated with a calcium source (30) to form a bead-forming mixture (32). The bead- forming mixture (32) is introduced dropwise into an alginate solution (34) to form spherical beads (36) through reverse spherification. The spherical beads (36) are incorporated into the beverage base (24). (Fig. 1)
