Abstract: The present invention introduces an apparatus and method for cooking the foodstuff in a pressurized steam oven with the foodstuff being steam cooked in the first stage and seared in the next stage. Various pressure cooking valve configurations are presented to enhance safety and cooking efficiency. In one configuration, a valve on the cooking apparatus lid is designed to protect the seal from extreme searing temperatures. Another configuration involves positioning the valve slightly apart from the cooking apparatus using an elongated metal pipe. This pipe, equipped with evenly distributed fins, enables swift cooling of hot steam, ensuring the safety of the valve and the steam or air pumps responsible for managing airflow situated behind it.
