Abstract: A method for preparing a non-dairy, plant-based milk and beverage using green gram (Vigna radiata L) is disclosed. The method involves cleaning, soaking, draining, and washing the green gram. The green gram is then dried in a hot-air oven at 100°C for 10 minutes, followed by roasting in a microwave oven at 70°C for 5-7 minutes. After cooling, the green gram is ground, sieved through two different test sieves (53 microns and 45 microns), and blended with distilled water in a 1:4 W/V ratio. The resulting slurry is filtered through a two-layered muslin cloth, subjected to double-jacketed mixing, pasteurized at 60 °C for 10 minutes, and homogenized using ultrasound at 20 kHz for 30 minutes. The mixture is then cooled and refrigerated. This process yields green gram milk. The addition of stabilizers, emulsifiers, sweeteners, and flavoring agents to the green gram milk, followed by blending in a food processor at 18,000 to 23,000 rpm, results in the production of a green gram beverage that is free from other plant1derived compounds and bovine milk
