Abstract: This invention relates to a method for preparing a probiotic-infused nutricereal-based beverage by nanoencapsulatingLactobacillus acidophilus and Lactobacillus plantarum using carrageenan through a nanoemulsification technique. The nanoencapsulation process enhances the stability and viability of probiotics, protecting them from environmental factors and improving their survival during storage and in the acidic gastric environment. The probiotics are incorporated into a beverage made from extracts of finger millet, pearl millet, and buckwheat, combined with bovine milk. This formulation not only ensures the effective delivery of probiotics but also enhances the bioavailability of these microorganisms. The final product is nutritionally rich, stable, and more palatable, offering significant health benefits and extended shelf life compared to conventional probiotic beverages.
