Abstract: The invention presents a novel process for the development of functional fruit bar from underutilized wild blackberries (Rubus), a genus within the Rosaceae family, known for its rich bioactive content. These berries, often overlooked in wild habitats, are packed with phytochemicals such as anthocyanins, flavonoids, and polyphenols, which have demonstrated health benefits including antioxidant, antimicrobial, and. anti-inflammatory properties. This innovative fruit bar offers a convenient, nutrient-dense alternative to conventional snacks, harnessing the unique bioactive potential of Rubus berries without the use of synthetic sweeteners, preservatives, or colorants. The fruit bar is created using fully ripe wild blackberries, sourced froin the Himalayan wild, with the addition of honey. The fruit bar retained substantial nutrients and bioactive compounds, as evidenced by the storage study results. This innovation addresses food waste by utilizing these wild berries, which are often left unharvested, creating a value-added product that promotes nutritional awareness, supports sustainable harvesting practices, and generates economic opportunities for local communities in Kashmir. The Rubus fruit bars cater to the growing demand for functional, health-promoting foods, offering a natural, convenient, and sustainable option for consumers seeking to enhance their daily nutrition with bioactive-rich foods.
