Abstract: Disclosed is a polyherbal nutraceutical chocolate formulation for gastro-protective activity. The formulation comprises a chocolate carrier matrix including dark chocolate, cocoa butter, cocoa solids, and a sweetening agent to provide a palatable edible base. The formulation further comprises a herbal active core including bioactive ingredients obtained from Citrus maxima, Zingiber officinale, Glycyrrhiza glabra, Emblica officinalis or Phyllanthus emblica, and Salvia hispanica. A microencapsulation system comprising gelatin and gum acacia forms a protective coacervate coating around the herbal active core through electrostatic interaction. The resulting microencapsulated herbal particles are dispersed within the chocolate carrier matrix and entrapped upon cooling and solidification. The formulation protects herbal bioactives from heat, light, oxidation, and processing-related degradation, masks bitterness, improves active retention, and enables controlled release for digestive support, heartburn management, and gastro-protective activity.
