Abstract: A millet-based milk powder composition (100) and its method of preparation. The composition comprises millet-derived solids, natural plant-based emulsifier, stabilizer, natural sweetener, natural dietary fibre, natural protein isolates, and natural antioxidants. It is shelf-stable and can be reconstituted in water to form a milk- like beverage. The millet used may include pearl millet, finger millet, foxtail millet, or their combinations. The emulsifier may include sunflower or soy lecithin; the stabilizer may include guar gum, xanthan gum, or lecithin. Natural sweeteners such as fruit juice, honey, or molasses, and dietary fibres like inulin, oat beta glucan, or psyllium husk are incorporated. Protein sources may include pea, chickpea, or mung bean, while antioxidants may include ascorbic acid, tocopherols, or green tea polyphenols. The method (200) involves grain cleaning, soaking, grinding, enzymatic hydrolysis, filtration, homogenization, ingredient blending, pasteurization, and drying using spray or freeze-drying. The product offers a plant based, nutrient-rich dairy alternative.
