Abstract: ABSTRACT Plant-Based Lipid Composition and Method for Preparing the Same A plant-based lipid composition comprises at least one triglyceride, monounsaturated fatty acid (MUFA), and polyunsaturated fatty acid (PUFA). The composition contains 70-90% triglycerides, 5-10% monounsaturated fats, and less than 5% polyunsaturated fats. It is anhydrous and may be derived from coconut milk, soya milk, peanut milk, oat milk, or almond milk. The triglycerides include medium-chain triglycerides like lauric acid and long-chain triglycerides like palmitic acid. The composition may contain fat-soluble vitamins, antioxidants, and trace minerals. A method for preparing the composition involves extracting plantbased milk, fermenting it, churning to obtain cream, heating to remove moisture, and cooling. This novel composition provides a plant-based alternative with balanced fatty acid profile.
