Abstract: ABSTRACT PLANT-BASED FROZEN DESSERT COMPOSITION AND METHOD FOR PREPARATION The present invention relates to a plant-based dessert composition (100) and a method (200) for preparing the same. The composition (100) comprises a seed-derived milk phase (102) including sunflower seed milk and watermelon seed milk, a plant-derived cream (104), a carbohydrate-based thickening agent (106), a cellulose-based stabilizer (108), a monoglyceride-based emulsifier (110), at least one sweetening agent (112), and at least one flavouring agent (114), which cooperatively form a homogeneous frozen emulsion matrix exhibiting enhanced creaminess, structural stability, melting resistance, and sensory acceptability. The method (200) comprises combining (202) the seed milks, incorporating (204) the remaining ingredients, subjecting (206) the mixture to controlled heating, cooling and aging (208), incorporating (210) the plant-derived cream, homogenizing (212), and freezing (214) the homogeneous emulsion under agitation to obtain a stable plant-based frozen dessert.
