The application for the patent was published on August 28, 2026, under issue no. 35/2026.

Abstract: The present invention relates to a pectinase-producing Aspergillus sp. isolated from date fruit peels and to a process for production and application of the resulting pectinase in industrial fruit juice extraction. The invention comprises isolation of fungal microorganisms associated with date fruit peels, screening of isolates for pectinolytic activity, selection and cultivation of a pectinase- producing Aspergillus sp. under controlled fermentation conditions, and recovery of extracellular pectinase. The recovered enzyme preparation is applied to comminuted fruit pulp before or during mechanical juice extraction to degrade pectic substances present in fruit tissues, thereby facilitating cell-matrix disruption, juice release, reduction in pulp viscosity and subsequent clarification and filtration. The process may employ submerged or solid-state fermentation and may utilize date fruit peel or other fruit-processing residues as fermentation substrates. The invention provides an enzyme-assisted fruit juice extraction technology that combines microbial enzyme production with value-added utilization of date fruit-processing residues and is adaptable to batch or continuous industrial fruit-processing operations.
