Abstract: NutriTrace- The AI-Driven Food Ingredient Risk Assessment and Adulteration Detection System (NutriTrace) is a consumer-focused health intelligence application designed to assist individuals in making safer-an-d-more informe-d-fo-od choices:-The system enabl-es users to scan packaged- fo-o-d- — labels and receive structured, AI-supported ingredient analysis in real time. The application extracts ingredient information using optical character recognition (OCR) and interprets complex ingredient names through natural language processing (NLP). It identifies hidden sugars, harmful additives, allergen indicators, and trans-fat signals that may not be easily understood by consumers. Based on user-selected age group and health conditions, the system generates a personalized risk score and highlights ingredients that require attention. In addition to risk assessment, the platform performs label-based adulteration inference by detecting suspicious ingredient patterns and potential misleading claims. The system presents results through clean, segregated visual reports, including ingredient explanations in simple English, risk breakdown details, and safer alternative recommendations.Rather than replacing laboratory testing or medical advice, NutriTrace functions as a preventive decision-support tool that enhances food transparency and consumer awareness. Secure data handling, ethical Al practices, and explainable risk outputs ensure reliability and trust. Overall, the system promotes healthier purchasing behavior, strengthens ingredient literacy, and supports preventive health management through intelligent food label analysis.
