MUMBAI, India, June 19 -- Intellectual Property India has published a patent application (202411087743 A) filed by Bric-Nabi, Mohali Formerly Ciab on November 13, 2024, for Nutritious Chocolate Substitute Composition And Its Method Of Preparation.

Abstract: The Invention provides a nutritious chocolate substitute and its method of preparation. The present invention provides a new cocoa butter replacer derived from mango seeds and the replacement of cocoa butter with mango butter in confectioneries, extracted from mango seed kernel (a by-product of the mango juice industry). The fat is extracted by using soxhlet process and cold press extraction from mango seed kernels. The developed method provides effective utilization of by-product of the mango juice industry and also offers the best substitute of cocoa butter at low cost for food applications.
