Abstract: This invention discloses a value-added, clean-label, and nutrient-enriched ready-to-use chickpea-based spread formulation developed to provide functional health value across all age groups. The composition comprises boiled chickpeas seamlessly blended with dates, cocoa powder, and a controlled amount of hot water to achieve a smooth, homogenous, and spreadable matrix without utilizing artificial flavors, refined sugar, hydrogenated fats, synthetic preservatives, or emulsifiers. In this formulation, chickpeas serve as a source of plant-based protein and complex carbohydrates, dates act as the sole natural sweetener and energy source, and cocoa powder contributes flavor and polyphenol antioxidants. Analytical characterization of the spread indicates an optimized compositional profile comprising a moisture content of circa 52.40% (w/w), an inorganic ash content of 0.93% (w/w), a crude protein content of approximately 8% (w/w), a crude fat content of 3% (w/w), and a vitamin C concentration of 2.2% (w/w).
