Abstract: The present invention discloses a nutritional intake monitoring system for elderly care using computer vision image processing and artificial intelligence. The system provides an automated and non-intrusive approach for estimating food consumption by analyzing pre-meal and post-meal RGB images. It comprises modules for image acquisition, food detection and segmentation, consumption and volume estimation, nutritional computation, and dietary risk assessment. Mathematical modeling is employed to calculate consumed food area, estimate food volume using scaling parameters, and determine caloric intake and macronutrient composition. A deficiency index is further used to evaluate dietary risk levels and generate reports for caregivers and healthcare professionals. The invention enables objective, explainable, and continuous monitoring of elderly nutrition without specialized hardware, thereby improving preventive healthcare and dietary management.
