Abstract: ABSTRACT NUTRIENT-RICH WATERMELON SEED MILK BEVERAGE The present disclosure relates to a nutrient-rich watermelon seed milk beverage formulation. More particularly, the beverage formulation comprises of aqueous watermelon seed extract, carboxymethyl cellulose, cocoa powder and stevia. The formulation demonstrates a synergistic effect, with watermelon seeds providing essential nutrients including rutin, quercetin, and eight phenolic acids, CMC ensuring texture consistency and stability, cocoa powder enhancing flavor and while providing flavanols, and stevia adding sweetness and providing polyphenols. The watermelon seed phenolics, cocoa flavanols, and stevia polyphenols produces a synergistic antioxidant effect. The said formulation is a plant-based beverage having antioxidant properties and serves as a healthy alternative to the available animal-based beverages.
