Abstract: This invention discloses a novel, clean-label, and nutrient-fortified amla-carrot-beet candy composition topped with roasted strawberry seeds to provide a functional, energy-giving, ready-to-eat confectionery snack. The candy is prepared from a uniform paste of boiled amla, sliced carrot, and beetroot, which is cooked over medium heat with the gradual addition of rock sugar, jaggery, fresh ginger, black salt, and ghee until thick and moldable. After cooling, the shaped matrix is coated with roasted strawberry seeds to improve texture, fiber content, and healthy lipid delivery. Analytical testing indicates a stable chemical profile containing an inorganic mineral ash content of 6.09% (w/w), a controlled storage moisture level of 30% (w/w), a bioactive vitamin C concentration of 0.15% (w/w), a vegetable protein level of 1.6% (w/w), and a crude fat fraction of 7.3% (w/w). The formulation contains no synthetic preservatives, artificial colors, or artificial flavors.
