Abstract: The present invention relates to a herbal multivitamin and antioxidant-enriched nutraceutical chocolate composition, and to a process for the preparation thereof, intended to address micronutrient deficiency and the low palatability of conventional vitamin supplements, particularly among children. The composition comprises a dark chocolate base, jaggery as a natural sweetening agent, and a synergistic blend of nine herbal powders, namely moringa, amla, matcha, orange peel, beetroot, thyme, tulasi, cinnamon and cardamom, each contributing a distinct profile of vitamins, minerals and antioxidant compounds. In the process of preparation, dark chocolate is melted by direct heating while jaggery is separately dissolved by double-boiling; the herbal powders are thereafter incorporated sequentially into the melted chocolate with continuous mixing, combined with the jaggery solution to form a homogeneous mass, poured into moulds, refrigerated for solidification, and unmoulded. The resulting composition has been evaluated for organoleptic properties, dimensional uniformity, hardness, weight variation, pH, drug content and storage stability, and demonstrated acceptable and reproducible characteristics across the formulations tested, thereby providing a stable, palatable and nutraceutically effective functional food product suitable for paediatric and general consumption alike
