Abstract: NATURALLY FORTIFIED RICE-SHAPED PLANT PRODUCT WITH ENHANCED NUTRITIONAL PROFILE The present invention provides plant-derived rice analogue composition and method of preparation thereof. The rice analogue composition comprises a dry composition comprising: about 90 to 97 wt.% of one or more plant-derived flours selected from chickpea flour, red lentil flour, green lentil flour, pea flour, mung bean flour, soybean flour, quinoa flour, edamame flour, millet flour, and combinations thereof; about 2 to 5 wt.% psyllium husk; about 0.2 to 1.5 wt.% xanthan gum; and about 0.01 to 0.1 wt.% enzyme blend, wherein the dry composition, upon mixing with water to form a hydrated dough having a moisture content of about 28 - 34%, is suitable for extrusion to produce rice analogue grains, which are subsequently dried to a moisture content of approximately 8 - 10% to provide structurally stable rice analogue grains.
