Abstract: [057] The present invention relates to a natural pigment-based food-grade edible ink formulation prepared from Clitoria ternatea flower pigment extract and Hylocereus polyrhizus peel pigment extract. The formulation comprises anthocyanin-rich and/or betalain- rich pigment concentrates blended with food-grade gum arabic, pectin, glycerol, an aqueous carrier, and pH-adjusting or stabilizing agents to obtain a stable and printable edible ink. The pigment extracts are prepared through controlled cleaning, size reduction, solvent extraction, pH adjustment, filtration, concentration, and stabilization steps to preserve colour intensity and functional responsiveness. The resulting ink provides blue, violet, pink, magenta, purple, or blended shades and may exhibit pH-responsive colour change suitable for intelligent food printing and packaging. The edible ink is useful for printing on wafer paper, rice paper, icing sheets, confectionery surfaces, bakery products, edible labels, and food-contact packaging materials. The invention provides a sustainable, clean-label, food-safe alternative to synthetic edible inks while supporting waste-valorization of dragon fruit peel. Accompanied Drawing [FIGS. 1-2]
