Abstract: Abstract Nano-Structured Microbial Exopolysaccharide Packaging System for Fresh Produce Preservation The present invention relates to a microbial exopolysaccharide nano-structured active packaging system for preservation of fresh produce through controlled regulation of oxygen permeability, moisture transmission, antioxidant activity, and antimicrobial performance. The system comprises purified microbial exopolysaccharides incorporated within a biodegradable polymer matrix to form an interconnected nano-structured network that actively modulates the storage microenvironment surrounding packaged fruits and vegetables. The nano-structured architecture regulates gaseous exchange, minimizes moisture loss, suppresses microbial proliferation, and reduces oxidative deterioration, delaying ripening and extending post-harvest shelf life. The invention provides a method for isolating and purifying microbial exopolysaccharides, integrating them into biodegradable polymer matrices, and fabricating active packaging materials using conventional film manufacturing techniques. The disclosed packaging system is biodegradable, environmentally sustainable, compatible with industrial-scale production, and applicable as films, edible coatings, wraps, liners, pouches, and related packaging formats for preservation of perishable agricultural commodities.
