Abstract: 30 ABSTRACT NANO BIOACTIVE-FORTIFIED SUGAR COMPOSITION AND PREPARATION METHOD THEREOF A nano bioactive-fortifed sugar composition is disclosed in the present invention which includes sugar crystals and nano bioactive formulation. The nano bioactive 5 formulation is coated onto the surface of the sugar crystals or is incorporated within the sugar crystals. The fortified sugar retains the sweetness, texture, appearance and caloric value of conventional sugar while exhibiting enhanced antioxidant activity and reduced glycemic response. The hydrogel matrix alters sucrose digestion, reducing the rate of glucose absorption contributing 10 to a glycemic index of less than 55. The invention further provides a scalable manufacturing method of nano bioactive-fortified sugar composition compatible with conventional sugar processing and refining operations.
