Abstract: The present disclosure proposes a three-dimensional printed functional food product (100) and a method for preparation thereof. The three-dimensional printed functional food product (100) comprises an oilseed-based matrix (102) and a date-based sweetening matrix (104). The oilseed-based matrix (102) comprises sunflower seeds (106), watermelon seeds (108), and black sesame seeds (110) in equal proportions, gellan gum (112), and water (114). The gellan gum (112) facilitates extrusion printability, ingredient binding, shape retention, structural stability, and minimization of oil separation during extrusion. The oilseed-based matrix (102) is extrusion- printed layer-by-layer and freeze-dried. The date-based sweetening matrix (104) comprises date pulp (116) and date syrup (118) and is separately deposited relative to the oilseed-based matrix (102), thereby forming a multilayer functional food product in which the oilseed-based matrix (102) and the date-based sweetening matrix (104) remain spatially distinct.
