Abstract: The present invention discloses a portable multi-pad paper-based dipstick sensor for rapid detection of free fatty acids and peroxides in reused cooking oil. The device comprises a surfactant-assisted extraction pad, an anthocyanin-based FFA detection pad, a potassium iodide–starch peroxide detection pad, and an isolated quality control pad mounted on a transparent backing wherein the isolated quality control pad provides internal validation of reagent stability. The system enables on-site visual assessment of hydrolytic and oxidative rancidity of the test sample. The invention provides a low-cost, user-friendly solution for field-level oil quality monitoring in households and food establishments.
