Abstract: METHOD FOR THE PREPARATION OF SEAWEED ENRICHED READY-TO-EAT BREAKFAST CEREAL The present invention relates to the development of seaweed-enriched ready-to-eat breakfast cereals in the field of functional food development. The process involves incorporating edible marine macro algae Rosenvingea intricata into a cereal formulation comprising corn flour, wheat flour, and date syrup. was incorporated at optimized levels of 5%, 10%, and 15%. The total ingredient weight is maintained constant by proportionally adjusting cereal flours while keeping the date syrup quantity unchanged. The process involves uniform mixing, dough formation, shaping into flakes, controlled thermal baking for starch gelatinization and moisture reduction, followed by cooling and packaging. Although the breakfast cereal containing 5% seaweed received higher sensory scores, the 15% seaweed incorporation is preferable due to its higher antioxidant content, improved texture, and potential ability to reduce glucose levels. The invention provides a nutritionally enhanced cereal enriched with natural minerals, dietary fibre, and bioactive compounds while maintaining desirable texture, crispness, and product stability.
