Abstract: The present disclosure relates to a liquid-in-liquid extrusion printing method integrating rheological control of a hydrocolloid-based edible ink and a drinkable beverage matrix with coordinated peristaltic pump flow rate and extrusion nozzle printing speed. The method comprises preparing a shear-thinning hydrocolloid-based edible ink and a drinkable beverage matrix comprising gellan gum, sodium citrate, sugar, and calcium chloride under controlled pH conditions. The edible ink and beverage matrix are selected based on viscosity, yield stress, shear-thinning behaviour, viscoelasticity, and post-shear structural recovery. A peristaltic pump delivers the edible ink through an extrusion nozzle, while a programmable motion platform moves the nozzle along a predetermined three-dimensional spatial path. Coordinated material delivery and nozzle movement facilitate continuous filament deposition. Rheological support and calcium-ion-mediated ionic stabilization enhance geometric fidelity, structural integrity, and positional retention while maintaining beverage drinkability.
