MUMBAI, India, Sept. 22 -- Intellectual Property India has published a patent application (202617077893 A) filed by Nienstedt Gmbh on June 24, 2026, for Method For Producing Cookable, Grillable Or Fryable Meat- Or Fish-Substitute Products From Vegetable Components, And Meat- Or Fish-Substitute Product.

Inventors include Pinz, Uwe; and Groneberg, Jan.

The application for the patent was published on September 18, 2026, under issue no. 38/2026.

Abstract: The invention relates to a method for producing cookable, grillable or fryable meat- or fish-substitute products (1) from vegetable components, wherein a fibrous starting mass (2) is produced from a vegetable base material, is dispensed by an extruder (3) by wet extrusion in the form of a continuous strand (4), and after leaving the extruder (3) is cut into individual portions (5). The known methods have the disadvantage that it is not possible to produce three-dimensional products. The invention improves on this in that frozen strand sections for forming individual portions (5) are produced from the strand (4) and, as starting material, are subjected to a moulding process in a pressing device (6) individually or in a combination of two or more individual portions (5).
