Abstract: The present invention relates to a process for preparing a chocolate composition containing alcoholic or hydroalcoholic herbal extracts. Sticky herbal extracts are first converted into a free-flowing powder using starch. The powder blend is then mixed into a molten chocolate base through a serial dilution technique to achieve uniform distribution of the extract. The mixture is homogenized, moulded, and cooled to obtain chocolate units containing a predetermined amount of herbal extract. The process provides improved dispersion of extracts, enhanced phytoconstituent stability, uniform content distribution, and acceptable organoleptic properties in the chocolate formulation.
