Inventors include Dr. V. P. Sangani; Dr. P. R. Davara; Dr. M. N. Dabhi; and Prof. P. P. Vora.

The application for the patent was published on September 25, 2026, under issue no. 39/2026.

Abstract: The present invention provides a method for enhancing storage stability of pearl millet flour. The method includes cleaning pearl millet grains, conditioning the cleaned grains to a moisture content of 16 to 17% on a wet basis, subjecting the conditioned grains to microwave treatment at a power level of 925 to 950 watts for a treatment time of 90 to 95 seconds to reduce lipase enzyme activity, drying the microwave treated grains, milling and sieving the dried grains to obtain pearl millet flour having a particle size of 150 to 200 micrometers, incorporating an antioxidant at a concentration of 0.35 to 0.45% by weight to inhibit oxidation of free fatty acids, and packaging the antioxidant-incorporated flour under vacuum conditions in aluminium foil pouches to provide a barrier against atmospheric oxygen and moisture ingress during storage.
