Abstract: A process for fortifying fermented rice–pulse batter with calcium and Vitamin A has been disclosed in the present invention. Calcium citrate is incorporated during soaking and/or grinding, while stabilized Vitamin A is added under controlled conditions. Fermentation enhances bioavailability through phytate degradation and improved solubility. The resulting batter produces steamed food products with enhanced nutritional value, maintained sensory quality, and industrial applicability.
