Abstract: [Problem] To provide a lutein–rich egg and a zeaxanthin-rich egg respectively containing lutein and zeaxanthin at high concentrations, a processed food material produced by processing each of the eggs, a method for producing each of the eggs, methods for producing the respective eggs, and a feed for egg-laying hens for use in the production methods. [Solution] In the lutein-rich egg according to the present invention, the lutein content is 2 mg or more in 100 g of the edible part of the egg. Since the lutein-rich egg according to the present invention contains lutein at a high concentration, daily ingestion of the egg in humans can protect human eyes from light stimulus and contribute to eye health maintenance. Therefore, the egg can be helpful for preventing the risk of eye diseases.
