MUMBAI, India, July 24 -- Intellectual Property India has published a patent application (202611062363 A) filed by Geeta University on May 16, 2026, for Low-Sugar Caramel-Coated Black Chickpea Snack And Method Of Preparation.

Inventors include Dr. Sonal; Mr. Ronak Duggar; Mr. Anurag Vashist; Dr. Vivek Rastogi; and Dr. Shiv Kumar Shivandu.

Abstract: The present invention relates to a nutritionally enriched snack composition comprising caramel-coated roasted black chickpeas and a method for its preparation. The snack utilizes black chickpeas as a primary ingredient, which are pre-treated, dried, and roasted to achieve a crunchy texture, followed by coating with a caramel layer derived from natural sweeteners such as jaggery, brown sugar, or coconut sugar. The formulation optionally includes minimal lipid content and natural flavoring agents to enhance sensory properties. The resulting product is a low-fat, plant-based, gluten-free snack with high protein and dietary fiber content and a reduced glycaemic index compared to conventional caramel snacks. The process ensures uniform coating, extended shelf-life, and desirable texture without the use of deep frying or artificial additives. The invention provides a healthier alternative to traditional caramel-coated snack products while maintaining taste, convenience, and commercial scalability.
