Abstract: ABSTRACT The present invention relates to solar-assisted agricultural product drying and provides an IoT-integrated solar drying system (100) comprising a solar- assisted drying chamber (101), phase change material storage unit (102), perforated stainless steel trays (103), temperature sensor (104), humidity sensor (105), microcontroller (106), duct fans (107), IoT communication module (108), and solar heating arrangement (109). The solar heating arrangement (109) supplies thermal energy to dry products supported on the trays (103), while the phase change material storage unit (102) stores excess thermal energy and releases it during reduced solar radiation. The sensors (104, 105) detect chamber temperature and humidity, and the microcontroller (106) processes the detected conditions to control the duct fans (107), which circulate air and remove moisture-laden air. The IoT communication module (108) communicates the drying-condition information for monitoring. The system (100) enables controlled and extended drying of fruits, vegetables, herbs and medicinal plants for domestic and small-scale post-harvest applications.
