Abstract: An embodiment herein generally related to an IoT-enabled refractance window drying system for the uniform drying of viscous food materials is disclosed. The system 100 comprises a feed hopper 102 and an auger dosing assembly 104 with at least one auger screw and drive motor for controlled conveying of viscous materials. A spreading unit 106 distributes the material into a substantially uniform thin layer onto a conveyor unit 108 featuring a transparent polymeric film. A heating unit 110 positioned beneath the film transfers heat, while a cooling unit 112 circulates chilled fluid to stabilize the dried material for removal by a scraper unit 114. An integrated IoT-enabled control system 118 is electronically coupled to one or more sensors 204to monitor operating parameters such as temperature, water level, and motor status. The control system automatically regulates the rotational speed of the auger and conveyor to maintain uniform layer thickness and consistent drying temperature, ensuring high product quality and automated process control FIG. 1
