Abstract: Food waste and food insecurity remain significant global challenges due to the lack of intelligent systems capable of ensuring food quality and efficient redistribution. The current food donation system is mainly based on manual coordination and does not have the capability of real-time tracking food freshness, leading to food spoilage, unsafe consumption, and misallocation of resources. The present invention provides an Internet-of-Things (IoT)-enabled food redistribution system and real- time food safety monitoring and dynamic allocation of recipients to enhance the safety, transparency and efficiency of surplus food redistribution. The proposed system consists of IoT sensor nodes attached to donated food containers to continuously monitor the stored food's temperature, humidity, and spoilage gases such as ammonia, hydrogen sulphide, and volatile organic compounds. The collected sensor data is sent to a cloud-based platform, and a food safety assessment module based on artificial intelligence (AI) calculates the information into a dynamic Food Safety Index and a prediction of the remaining safe consumption time. A dynamic recipient allocation engine (RAE) automatically matches the most appropriate recipient organization and volunteer courier for the most suitable food product among multiple parameters based on these predictions: food safety status, remaining shelf life, travel distance, transportation time, recipient demand, storage capacity, and volunteer availability. The allocation is reviewed continually whenever there are changes in food quality or logistical circumstances to minimise food wastage and maximise the effectiveness of food redirection. To make it transparent and accountable, blockchain technology is incorporated to keep the donation registration, sensor data, transportation process, allocation process, and delivery confirmation secure and untamperable throughout the whole process of redistribution. Special mobile applications provide a seamless interaction among donors, volunteers, recipient organisations, and administrators, allowing them to monitor and manage tasks in real time. In the proposed invention, all these functions are integrated into a single platform, enabling the implementation of a unified solution for IoT sensing, AI food safety prediction, dynamic logistics optimization, and blockchain-based traceability. It provides a way to ensure that food is safe for consumption and doesn't go to waste, which improves food safety, cuts down on waste, boosts resource utilization, and enables sustainable food management for restaurants, supermarkets, food banks, NGOs and humanitarian organizations
