Abstract: ABSTRACT IMAGE-BASED FRESHNESS ASSESSMENT SYSTEM AND METHOD FOR FRUITS AND VEGETABLES The present invention relates to an image-based freshness assessment system (100) and a method (200) for assessing freshness and predicting remaining shelf-life of fruits and vegetables. The system (100) comprises an image acquisition device (102) configured to acquire images of fruits or vegetables under different environmental conditions and viewing orientations throughout spoilage progression, and at least one processor (104) configured to generate structured image records comprising acquisition-condition information, temporal spoilage information, freshness annotations, and numerical shelf-life annotations, organize the records into a temporally indexed structured image dataset, and process the dataset using one or more trained prediction models to simultaneously generate freshness classification and remaining shelf-life prediction for subsequently acquired images. The method (200) comprises acquiring (202), controlling (204), generating (206), storing (208), and processing (210) corresponding image data to provide freshness assessment and remaining shelf-life prediction.
